Studies on the Quality of Radish


Abstract
External quality (yield, hardness) as well as several constituents such as dry matter, vitamin C, thiocyanate ion content, nitrate, reducing sugar and pectic substance of cultivars and in parts of the root were studied.
Quality characters of different cultivars were reported and discussed.
Korean cultivars were harder and contented more dry matter, vitamin C and thiocyanate ion than Japanese ones, but the nitrate content was reverse.
The content of dry matter, vitamin C, thiocyanate and pectic substance in cortex was higher than that in fleshy part of the root, but nitrate content was not different between them.
The upper part (crown) of the root was harder than the other parts such as middle and lower part.
